It’s hybrid week on The Great Australian Bake Off – a celebration of the wild food mash-up treats that regularly litter our Insta feeds.
From cronuts, to cruffins and capookies, 2019 is officially the year of blended flavours and we’re in full support of this glorious trend.
Tonight’s episode of Bake Off, which is available to stream on Foxtel Now, saw the top five bakers churn out some unbelievable hybrid dishes as grand final week nears.
But there was one dessert in particular that had judges Matt Moran and Maggie Beer in awe, despite their initial trepidation at the “odd” recipe.

For the final showstopper challenge, contestants were required to make a biscuit cake with three layers separated by filling, as well as three different kinds of homemade sweets to sprinkle on top.
Series frontrunner Sunny, 26, tasked herself with making a coconut biscuit cake in the shape of a ‘4’, with flavours that embodied a “summer afternoon”. She layered her cake with rose water cream cheese icing, decorated it with rosé and lychee jellies, rose meringues, coconut marshmallows and fresh raspberries.
I think it sounds like a cocktail cake. What’s not to love? According to Matt and Maggie, the rose water cream cheese was a weird combo.
“It’s a little bit odd. It … It seems a little bit odd,” Matt told Sunny after it was way too late for her to change her mind.
Thankfully Sunny charged ahead with her bake anyway, which after tasting, Matt described as “close to the nicest thing I’ve ever eaten in the Bake Off shed”.
“I was concerned about it. (But) the creaminess of the cream cheese and the acidity of the lychee, it’s a beautiful balance,” he told her.
Maggie agreed, saying the cake was “extraordinary”.
“I don’t think I’ve ever had anything quite like this before. This combination really is extraordinary.”

Naturally, Sunny took out star baker for the week, with two weeks to go until the grand final.

American cook Angela was sent home after failing to perform across all three challenges.
The popular baking show, hosted by comedians Claire Hooper and Mel Buttle, airs across 10 weeks and features a group of bakers as they are put through a series of challenges in search of Australia’s best amateur baker.
